| Homemade Croutons
4 slices of firm bread (stack slices and trim off crusts) Cut bread into 1/2 cubes 1 1/2 ounces of unsalted butter 1 teaspoon of vegetable oil
Melt butter with oil in a heavy pan. Add bread cubes. Although white bread is most traditional for croutons, any good quality bread will do. Experiment with whole wheat, rye, pumpernickel. Sauté bread cubes, about 2 minutes, turning to brown cubes evenly. Remove croutons with slotted spoon, drain on paper towels. Serve or keep warm in low oven until ready to serve. Makes 2 cups
