Cheese Ring

Cheese Ring one 16 ounce package of extra sharp Cheddar cheese, shredded one 16 ounce package of medium Cheddar cheese, shredded 1 small onion, grated 1 cup of mayonnaise 1 teaspoon of red pepper 1 cup of chopped pecans parsley sprigs round butter crackers strawberries, optional Combine the first 5 ingredients and mix well. Sprinkle about 1/4 cup of pecans in an oiled 7 cup ring mold and press cheese mixture into mold. Chill until firm. Unmold on platter, and pat remaining pecans onto  cheese mixture into mold. Chill until firm. Unmold on platter, and pat remaining pecans onto cheese ring. Garnish with parsley sprigs. serve on crackers with strawberry preserves on top, if desired. Yield: 1 Cheese ring.
