| Croustades w/Crabmeat Mornay
14 - 15 slices of soft white bread 8 ounces of fresh or frozen crabmeat 2 tablespoons of flour 1/4 teaspoon of pepper 1 cup of milk 2 tablespoons of cubed Gruyere cheese 2 tablespoons of grated Parmesan cheese or Romano cheese 1/2 teaspoon of salt
Cut circles from bread using a 2 inch cutter or juice glass. You can cut 2 circles from each piece. Press bread circles into generously buttered miniature muffin tins. Cover with plastic wrap. Melt butter in saucepan. Stir in flour. Gradually add milk while stirring to keep sauce smooth. Add cheese and continue stirring until cheese melts. Stir crabmeat into cheese sauce. (Mixture can be refrigerated at this point) Spoon a small amount of filling into croustades. Bake at 425ºF. for 15 minutes. Keep warm on hot tray. Serves 6 - 8
