| Diabetic Guacamole
2 large avocados, peeled, seeded, and mashed 3 medium size canned green chiles, seeded and chopped 3 tablespoons of lemon or lime juice 1/4 teaspoon of salt
Combine avocados and green chiles in a medium bowl, stirring to blend. Add lemon juice and salt, stirring well. Cover and refrigerate until thoroughly chilled. 12 servings
Guacamole may be used to top shredded lettuce.
