Queso Rio Grande Cocktail Dip | Queso Rio Grande Cocktail Dip
1 large onion 1 can of tomatoes 1 can of chili peppers 1 pound of grated brick or Velveeta cheese
Mince onion and sauté lightly in butter or oleo. Add tomatoes, peppers (unless you like mixture truly fiery hot,, use only 2 of the peppers) chopped finely and simmer until soft. Just before serving add cheese (let cheese harden before grating). Stir and heat through. serve in chafing dish with king size Fritos for dipping.
