Three-Cheese Ball

one 8-ounce package of cream cheese, room temperature
5 ounces cheddar cheese spread, room temperature
10 ounces of bleu cheese, room temperature
1 small onion, minced
1 garlic clove, minced
2 tablespoons of brandy, or medium dry sherry
chopped nuts
apples or crackers

Beat cheeses until well mixed and fluffy. Add onion, garlic, and liquor and mix well. Chill Shape into ball and coat with nuts. Chill again briefly before serving. Serve with slices of unpeeled apples and/or crackers. Keeps several weeks in refrigerator. Makes about 2 1/2 cups.
