| Vegetarian Hors D'oeuvre
1 pound of fresh green beans 2 tablespoons (1/4 stick) of butter 1 large onion, very thinly sliced 2 hard cooked eggs, halved 2 slices white bread (crusts trimmed), toasted and broken into pieces 4 walnut halves, toasted salt and freshly ground pepper to taste crudités, or crackers
Cook beans in salted water to cover until tender. Drain well. Melt butter in medium skillet over medium heat. Add onion and sauté until well browned. Combine with beans, eggs, toast, walnuts, salt, and pepper in processor, or blender, and mince finely. Transfer to serving bowl, cover, and chill. Serve with crudités or crackers. |
