| Creole Sauce
1/4 cup of chopped onion 1/4 cup of chopped green pepper 2 tablespoons of salad oil
one 1 pound can (2 cups) of tomatoes, drained 2 tablespoons of chopped pimiento 1 tablespoon of sugar 1/2 teaspoon of salt 1/4 teaspoon of pepper
Cook the onion and green pepper in salad oil until tender, but not brown. Add the remaining ingredients. Simmer about 20 minutes or till thick. Makes about 2 cups
