| Beef with Okra
1 pound of beef, cut in cubes 2 packages of frozen okra 1 small can of tomato paste salt and pepper to taste Lemon juice to taste 1 cup of long grain rice |

Cook the beef in boiling, salted water until tender, then drain. Brown in small amount of fat in a skillet. Add 2 cups of water, okra and tomato paste and cook until okra is done. Add the salt, pepper and lemon juice. Add 1 tablespoon of fat to 2 cups of boiling, salted water in a saucepan. Add the rice slowly, then boil for 10 minutes. Reduce heat and cook, without stirring, until all water evaporates. Serve the beef mixture over rice. 6 servings
