Beef Brisket and Sauerkraut

4 pounds of brisket
Hot water
1 tablespoon of salt
1 quart of sauerkraut
1/4 teaspoon of pepper
1 cup of vinegar
3 tablespoons of brown sugar
1 medium potato, grated
1 teaspoon of caraway seed


Cover brisket with water; season. Simmer for 1 hour to 1 1/2 hours. Add  sauerkraut, vinegar and brown sugar. Cook 1 hour longer. Add potato and caraway seed. Cook 10 minutes longer. Yield 6 to 8 servings.
