| Yorkshire Pudding w/Savory Beef
4 ounces of all purpose flour 2 medium eggs 1 1/4 cups of milk 2 tablespoons of vegetable oil 1 onion, chopped 1 carrot, chopped 3 1/2 ounces of mushrooms, chopped 12 ounces of ground beef 7 ounce can of chopped tomatoes 7 ounces of baked beans salt and black pepper fresh parsley to garnish

Sift flour and pinch of salt into a bowl, then make a well in the center. Break eggs into the well. Beat eggs gradually drawing in the flour and adding milk a little at a time until it forms a smooth batter. Cover and leave for 30 minutes.
Preheat the oven to 425ºF. Heat one tablespoon of oil in a large heavy based frying pan and cook onion and carrot for 5 minutes or until softened. Add mushrooms and cook for 2 - 3 minutes, then stir in the beef and cook for 5 minutes or until browned. Add tomatoes and cook for 15 minutes.. Stir in baked beans, heat for 5 minutes, season and keep warm.
Meanwhile, divide the remaining oil between 4 Yorkshire pudding tins. Place in the oven for 5 minutes or until the oil is hot. Pour in the batter and cook for 20 - 25 minutes, until crisp. Place on serving plates, spoon in the ground beef and garnish with parsley. Serves 4
Note: These Yorkshire pudding cases are delicious with a variety of fillings - try them with chicken curry, meatballs in tomato sauce or a thick vegetable ratatouille.
