| Beef Cheese Casserole
8 ounces of egg noodles 1 pound of ground chuck 1 tablespoon of butter 2 cups of tomato sauce 2 cups of cottage cheese 1/2 cup of sour cream 1/2 cup of minced scallions 1 tablespoon of finely chopped green pepper 2 tablespoons of butter, melted |

Cook the noodles in boiling, salted water for 9 minutes. Drain. Meantime, cook neat in the 1 tablespoon of butter, stirring constantly, until it loses sits red color. Stir in tomato sauce and set aside. Combine the cheese, sour cream, scallions and green pepper. In a buttered 2 1/2 - 3 quart casserole place half the noodles. Cover with the cheese mixture, then with the remaining noodles. Pour melted butter over. Spread the meat mixture on top. Bake in 375ºF. oven for 20 minutes. Serves 4 - 6
