| Beef & Lima Bean Casserole
2 tablespoons of minced onion 1 tablespoon of finely chopped green pepper 2 tablespoons of bacon fat 1 pound of ground bottom round 1 teaspoon of salt freshly ground pepper to taste 1/4 teaspoon of thyme 1 can of condensed tomato soup 1 package of frozen lima beans, just defrosted 1/2 cup of grated Parmesan cheese |

Cook the onions and green pepper in the bacon fat until soft, but not browned. Stir in meat and cook, stirring constantly with a fork, until it loses its red color. Add seasonings and soup. Stir in lime beans and bring the mixture to a boil. Turn into a greased 1 1/2 - 2 quart casserole and sprinkle cheese over. Bake in 400ºF. oven for 30 minutes. Serves 4
