Italian Noodle Casserole

Italian Noodle Casserole

8 ounces of noodles
1 1/2 pounds of ground chuck
1 onion, mashed
1/4 cup of olive oil
2 cups of tomato sauce
2 tablespoons of tomato paste
3 eggs, beaten
1 package of frozen chopped spinach, defrosted
1 pound of cottage cheese
1/2 cup of grated Parmesan cheese

Cook the noodles in boiling, salted water for 8 minutes. Drain, Cook the meat, onion and garlic in the olive oil, stirring constantly, until the meat loses its red color. Mix meat and noodles with tomato sauce, tomato paste, eggs, spinach and cottage cheese in a 2 1/2 - 3 quart casserole. Top with grated Parmesan. Bake in 375ºF. oven for 30 minutes or until cheese is brown. Serves 6
