| Meat Balls & Sauerkraut Casserole
1 pound of ground chuck 1 cup of bread crumbs 2 tablespoons of minced onion 1 teaspoon of salt freshly ground pepper 1 egg, beaten 3 teaspoons of prepared horseradish 2 tablespoons of bacon fat 1 pound of sauerkraut 2 tablespoons of vinegar 3 tablespoons of brown sugar one 1 pound 4 ounce can of sliced apples 1 tablespoon of caraway seeds |

Mix the beef, crumbs, onion, salt and pepper, beaten egg, and horseradish and form into small round balls. Brown these in bacon fat. Mix sauerkraut, vinegar, brown sugar, apple slices and caraway seeds and place in bottom of a greased 2 1/2 quart casserole. Lay meat balls on top and bake covered in 375ºF. oven for 1/2 hour. Serves 4
