| Stifado
2 pounds of top round, cut into 1 inch squares 2 tablespoons of butter 2 tablespoons of cooking oil 12 small onions 1 clove garlic, mashed 3 tomatoes, sliced 1 bay leaf 1 cup of white wine |

Brown the meat in butter and oil in a 3 quart casserole. Add onions and garlic and brown lightly. Add tomatoes, bay leaf and white wine. Put in enough water so that the contents of the casserole are half covered. Cover the casserole and simmer for 1 1/2 hours or until the meat is tender. Serves 4 - 6.
