Broccoli and Rice Casserole

1 tablespoon of diced onion
1/4 cup of butter or margarine
2 cups of quick-cooking rice
2 cups of water
one 10 ounce can of cream of mushroom
1/2 teaspoon of salt
2 Jars (5-oz) Sharp Old Cheddar cheese
two 10 ounce packages of  frozen chopped broccoli

Combine all ingredients in a covered casserole dish. Bake about 1 hour at 325ºF.  Stir once or twice during baking time.

Broccoli And Rice Casserole (4 Pts)

one 10 3/4 ounce can of cream of chicken soup,  99% Fat-free
2 teaspoons of onion flakes
2 teaspoons of Molly McButter
1/2 cup of fat free sour cream
1 package of Ranch dressing mix, dry
one 14 1/2 ounce can of chicken broth, fat free
2 cups of Minute Rice, uncooked
1 package broccoli, frozen or 1 1/2 cup of fresh broccoli
1/2 cup of cheddar cheese, fat free,  grated
black pepper

Mix first 6 ingredients until smooth with mixer. Add next 9 ingredients. Cover and bake 350ºF.  for 40 minutes. 2 g. fat, 2 g. fiber
