| Duck with Red Cabbage
1 head of red cabbage, shredded 1 onion, chopped salt 6 ounces of salt pork, diced 1/2 cup of red wine or chicken broth one 5 - 6 pound duck |

Put cabbage and onion in a bowl, sprinkle with salt and let stand for 10 minutes. Squeeze out liquid. fry salt pork in a skillet until golden. Add cabbage onion mixture and wine. Cover and simmer for 20 minutes. Place duck in a roasting pan. Bake at 425ºF. for 30 minutes. Drain off fat. Spoon cabbage mixture over duck. Reduce oven temperature to 350ºF. Bake 45 minutes or until duck is tender. Baste frequently. 4 servings
