Italian Zucchini and Pepper Strata

1 loaf of Italian bread
1 1/2 cups of French fried onions, divided
4 ounces of shredded mozzarella cheese (yielding about 1 cup)
1 small zucchini, thinly sliced
1 red bell pepper, sliced
5 eggs
2 1/2 cups of milk
1 1/2 ounces of grated Parmesan cheese (about 1/3 cup)
1/2 teaspoon of dried oregano
1/2 teaspoon of dried basil leaves

Preheat oven to 350ºF. Grease 3-quart shallow baking dish. Cut enough slices of bread, 1/2 inch thick, to arrange single layer in bottom of dish, overlapping slices if necessary. Layer 2/3 cup French fried onions, 2/3 cup mozzarella cheese, zucchini, and bell pepper over bread. Beat eggs, milk Parmesan cheese, oregano, basil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in medium bowl. Pour over layers. Sprinkle with remaining 1/3 cup mozzarella cheese. Let stand 10 minutes. Bake 45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 2/3 cup onions. Bake 5 minutes more or until onions are golden. Cool on wire rack 10 minutes. Cut into squares to serve. Serves 8.
