| Mushroom & Onion Egg Bake
1 tablespoon of vegetable oil 4 green onions, chopped 4 ounces of mushrooms, sliced 1 cup of cottage cheese 1 cup of sour cream 6 eggs 2 tablespoons of all-purpose flour 1/4 teaspoon of salt 1/4 teaspoon of black pepper dash of hot pepper sauce
Preheat oven to 350ºF. Grease shallow 1-quart baking dish. Heat oil in medium skillet over medium heat. Add onions and mushrooms, cook until just tender. Set aside. In blender, process cottage cheese until almost smooth. Add sour cream, eggs, flour, salt, black pepper, and hot pepper sauce; process until combined. Stir in onions and mushrooms. Pour into greased dish. Bake about 40 minutes or until knife inserted near center comes out clean. Serves 6.
