Sausage and Cheese Grits

non-stick cooking spray
1 pound of cooked sausage (mild or hot), crumbled and drained
1 1/2 cups of grits
2 1/2 cups of shredded Cheddar cheese
3 tablespoons of vegetable oil
1 1/2 cups of milk
3 eggs, lightly beaten

Preheat oven to 350ºF.  Lightly spray a 13x9x 2-inch baking dish with non-stick cooking spray. Evenly spread crumbled sausage on bottom of dish; set aside. Bring 4 1/2 cups water to a boil in a large saucepan. Stir in grits and lower heat. Cook 5 minutes more until thickened; stirring occasionally. Add cheese and vegetable oil; stir until cheese has melted. Stir in milk and eggs; blend well. Evenly spoon mixture over sausage; bake uncovered, 1 hour or until grits have set. Serves 6 to 8.
