| Curried Tuna on Rice
2 medium onions, peeled and diced 3 tablespoons of butter or margarine 1/2 garlic clove, peeled and mashed 2 tablespoons of curry powder 1 1/2 tablespoons of flour 3/4 cup of milk two 7 ounce cans of tuna, drained and broken 2 cups of commercial sour cream 1/2 cup of white raisins, soaked and drained 5 cups of hot buttered rice
Sauté onions in butter or margarine 5 minutes in chafing dish. Add garlic and curry powder. Heat and stir until very hot. Remove garlic and discard it. Stir in flour smoothly. Add milk, stirring constantly. Cook 1 or 2 minutes, until bubbly. Add tuna and mix over low heat about 5 minutes. Stir in sour cream. Let stand until hot and sauce is well blended. Combine raisins and hot rice. Serve curried tuna on generous portions of rice. Makes 4 servings
