Daisyfield's Welsh Rabbit

4 tablespoons of butter or margarine
1/4 cup of sifted all purpose flour
1/2 teaspoon of salt
1/4 teaspoon of pepper
1/4 teaspoon of dry mustard
one 12 ounce can of V8 vegetable juice
1/2 pound of processed American cheese, grated
Crackers or toast

Melt butter or margarine in chafing dish. Stir in flour smoothly. Add salt, pepper, and mustard. Mix and add vegetable juices gradually, stirring constantly. Bring to a boil, stirring continually. Cook 2 minutes. Add cheese and stir until melted. Serve at once on crackers, toast or split and toasted English muffins. Makes 4 or 5 servings
