| Sunday Supper Scrambled Eggs
1 tablespoon of olive oil 2 onions, peeled and sliced 1 cup of chopped, drained, canned tomatoes 1/2 teaspoon of salt 1/2 teaspoon of pepper 1/2 teaspoon of brown sugar 1/4 teaspoon of oregano 6 eggs 4 English muffins or toast slices
Heat olive oil in chafing dish pan. Sauté onions over moderate heat, 5 minutes or until tender. Add tomatoes and seasonings. Stir 1 or 2 minutes. Beat eggs slightly. Pour into pan. Cook over low heat until almost set. Stir gently 1 or 2 minutes, until scrambled. Serve at once on split and toasted English muffins or on toast. Makes 4 servings
