Baked Cornish Game Hens

6 whole Cornish game hens
1/2 medium onion, chopped
3 celery ribs, chopped
1/2 green pepper, chopped
10 ounces of mushrooms, chopped
1 garlic clove, minced
2 tablespoons of fresh basil, minced
1 teaspoon of oregano
2 tablespoons of fresh parsley
3/4 cup of butter, melted

Set oven to 325ºF. Stir 1/2 cup of melted butter with onion, celery, green pepper, mushrooms, garlic, and herbs. Let cool. Season hens inside and out with salt and pepper. Stuff hens with equal amounts of the vegetable mix. Place hens in baking dish, breast side up. Drizzle with remaining 1/4 cup of butter. Cover, and bake at 325ºF. for 1 1/2 hours. Brown at 500ºF. for 1 to 2 minutes. Serve. Serves 6.
