| Beer Batter Chicken
2 eggs, beaten 2/3 cup of beer 1 cup of flour 1/2 teaspoon of salt 2 tablespoons of oil or melted shortening one 3 pound chicken, cut into serving pieces Oil for deep frying
Combine eggs and beer. Gradually stir in flour, salt, and 2 tablespoons of oil until batter is smooth. Dip chicken into batter. Heat oil in deep, heavy frying pan to 375ºF. Add chicken and fry for 15 to 20 minutes, until chicken is golden and crisp. Drain on paper towels and serve. Serves 3 - 4
