| Broiled Turkey Patties
2 tablespoons of olive oil 1/2 cup of finely chopped green bell pepper 1/3 cup of finely chopped celery 1 pound of ground turkey 2 medium eggs 1 teaspoon of teriyaki sauce or prepared mustard 1/2 teaspoon of minced garlic 1/4 teaspoon of salt 1/4 teaspoon of pepper
Coat a small nonstick skillet with 1 tablespoon of olive oil and place over medium heat. Add green pepper and celery and sauté 4 to 5 minutes. Let cool. In a medium bowl, combine sautéed mixture with turkey, eggs, teriyaki sauce or mustard, garlic, salt and pepper. Preheat broiler. Divide mixture into 4 equal portions, shaping each into a 4 inch patty. Line a broiler pan with aluminum foil and coat the foil with the remaining 1 tablespoon of olive oil. Place the patties on the pan and broil 4 to 6 minutes per side, until thoroughly cooked. Serves 4 |
