| Apricot Game Hens
1 cup of Chunky Apricot Preserves 1/3 cup of dry white wine 1/4 cup (1/2 stick) of butter, melted two 8 ounce packages of stuffing mix 3/4 cup of pecans 6 Cornish game hens, thawed, rinsed & patted dry salt & freshly ground pepper fresh parsley or watercress sprigs, garnish |

Preheat oven to 350ºF. Combine first 3 ingredients in small bowl. Prepare stuffing mix according to package directions and stir in pecans. Sprinkle hens inside and out with salt and pepper. Fill loosely with stuffing. spooning remainder into small baking sigh. Truss hens securely. Arrange in roasting pan. Brush each hen generously with some of apricot sauce. Bake hens and remaining stuffing, basting hens frequently until done, about 1 hour. Spoon remaining stuffing onto serving platters and arrange hens on top. Garnish with parsley or watercress. 6 servings |
