| Cornish Hens Parisian
Thaw 2 frozen Rock Cornish hens ( about 1 pound each). Heat oven to 350ºF. Rub cavities of hens with salt and pepper. Place breast side up on rack in shallow roasting pan. Brush Sauce Parisian on hens. Roast uncovered until tender, about 1 hour, brushing sauce on hens 3 or 4 times. 2 servings
Sauce Parisian
1/4 cup of butter or margarine 1/4 cup of vermouth or other white wine 1/2 teaspoon of garlic salt 1/2 teaspoon of onion salt
In a small saucepan, heat all ingredients to boiling. About 1/2 cup
