Cornish Hens with Prunes

2 Cornish hens, 1 to 1 1/2 pounds each
8 dried prunes, soaked over night or heated in microwave for 2 minutes in water to cover
Freshly ground pepper
1/2 cup of orange juice
2 tablespoons of honey
2 tablespoons of balsamic vinegar
1/2 teaspoon of Kikkoman soy sauce
1 teaspoon of dried, crumbled rosemary
1 large clove garlic, crushed
Garnish: grated orange peel, chopped fresh parsley

Wash and dry Cornish hens. Fill each cavity with 4 prunes and sprinkle skin with freshly ground pepper. Mix orange juice, honey, vinegar, soy sauce, rosemary, and garlic. Pour over hens and let stand for 30 minutes. In 375ºF. oven bake hens for about 45 minutes, or until juices run clear when pricked. Baste every 10 to 15 minutes. Cut each hen in half. Pour sauce over all and sprinkle with grated orange peel and chopped parsley. Serves 4
