| Flaming Game Hens
3 Cornish game hens, halved salt and white pepper 2tablespoons of imitation bacon bits 1 1/2 cups of seedless grapes 1 tablespoon of corn oil margarine 2 green onions, including green tops, finely chopped 1/2 cup of Port 3/4 cup of Basic White Sauce 1/2 cup of flaming Brandy, warmed
Sprinkle both sides of game hens with salt and pepper. Place split game hens cut side down in a flat baking dish in which they fit closely. Sprinkle the bacon bits evenly over the top of the hens. Place pan in a 350ºF. oven for 50 minutes. While game hens are baking, put the grapes in a saucepan of boiling water, cover and simmer for 5 minutes. Melt the margarine in another saucepan. Add the finely chopped green onions and sauté for 3 minutes. Drain the grapes and add to the onions. Add the Port wine. When it starts to simmer, ignite the wine and stir until the flame goes out. Slowly add the Basic White Sauce, stirring constantly. Remove the game hens from the oven and place on a metal serving tray. Put the game hens on the table or a serving cart. Pour the warmed brandy over the game hens and ignite. Serve flaming.
Do not flame the game hens in the kitchen and then carry them to the table. This can be dangerous!!!
