Poulet A La Diable
one 8 ounce jar of Dijon mustard 3 ounces (3/4 cup) of breadcrumbs 2 Cornish game hens, washed and patted dry parsley flakes 2 - 3 tablespoons of butter (1/4 to 3/8 stick) Preheat oven to 350ºF. Combine mustard and breadcrumbs in bowl and blend thoroughly. Spread some of mixture over entire surface of hens, patting firmly with hands. Spoon remainder into cavity. Sprinkle with parsley and dot lightly with butter. Place on rack and roast until tender, about 1 1/4 hours. If coating starts to overbrown, tent with foil. 4 servings |
