| Stuffed Cornish Game Hens
4 Cornish game hens 1/2 cup of chopped mushrooms 1/2 cup of chopped onions 6 tablespoons of minced parsley 3/4 pound of hot Italian sausage meat 1 teaspoon of minced garlic 1 egg, beaten 1/2 cup of bread crumbs from fresh Italian bread 2 tablespoons of butter
Sauté onion, garlic, and mushrooms until soft. Add sausage meat and sauté until no longer pink. Remove from heat; stir in parsley and bread crumbs; let cool. Mix in egg. Stuff each hen with 1/4 of the stuffing. Baste hens with mixture of 1 stick melted butter and 1 cup Sauterne wine. Bake in a 350ºF. oven for 1 1/2 to 2 hours, until browned, basting often. Serves 8.
