| Summer Cornish Roast
3 Tyson Cornish Game Hens, halved 1 pint of buttermilk (2 cups) 1 cup of cream of mushroom or cream of celery soup 1/4 teaspoon of garlic 1 teaspoon of basil 1 teaspoon of thyme 1 teaspoon of rosemary 1 teaspoon of salt 2 dashes of pepper 8 ounces of grated Cheddar cheese New (small) potatoes New (small) onions 3 stalks celery, sliced (save leaves) Mushrooms
Place Cornish hens in baking dish, skin side up. Mix buttermilk, soup and garlic; set aside. Sprinkle Cornish with seasonings and cheese. Spoon sauce over all. Bake at 350ºF. (preheated) for 45 - 60 minutes. Last 30 minutes, add new potatoes, onions, celery, and mushrooms. Arrange on platter and garnish with celery leave. Serves 6
