Chicken Nuggets with Orange Salsa

Nuggets:
1/4 cup of honey
1/4 cup of Dijon mustard
1 tablespoon of lemon juice
1 tablespoon of curry powder
1 pound of chicken breasts, skinned boned, and cut into 1-inch cubes

Salsa:
2 navel oranges
1 small jalapeno pepper, seeded and minced
2 tablespoons of packed brown sugar
2 tablespoons of chopped fresh cilantro
1 tablespoon of oil

To make the nuggets: Preheat oven to 350ºF.  In a small saucepan, combine the honey, mustard, lemon juice, and curry powder. Mix well. Bring to a boil over medium-high heat. Pour into a medium bowl. Add chicken and toss well to coat. Coat a large baking sheet wit non-stick spray. Arrange the chicken on the baking sheet in a single layer. Bake for 25 minutes, or until the chicken is no longer pink in the center.

To make the salsa: Peel 1 orange and chop it; place in a medium bowl. Juice the other orange and add to the bowl. Add the peppers, brown sugar, cilantro, and oil. Stir well to combine. Let stand at room temperature for 20 minutes, stirring occasionally. Serve with the nuggets. Serves 8.
