Chicken A La Provencale
2 broilers, 2 pounds each salt 3 ripe tomatoes pepper 1/2 cup of diced Italian ham 3 ounces of olive oil a pinch of thyme 2 cloves garlic a pinch of oregano 6 ounces of very dry white wine 1 cup of pitted green olives
Cut broiler into 8 pieces and season with salt and pepper. Put olive oil in heavy skillet and add cloves crushed and minced. when oil is hot put in chicken and sauté until golden brown on all sides. The add tomatoes, peeled, seeded and chopped, add ham, thyme and oregano and the wine. Simmer, turning the chicken occasionally about 25 minutes. Then add olives and cook 5 minutes more. Remove the chicken pieces from skillet and place on a hot platter. Increase heat and let the sauce reduce a little if it is too thin. Then pour it over the chicken and serve. |
