Chicken w/Almonds
1/4 cup of vegetable oil 2 tablespoons of butter or margarine 2 1/2 pounds of chicken pieces 2 onions, thinly sliced 3 tomatoes, skinned, seeded and chopped 1/8 teaspoon of cinnamon Salt and pepper to taste 1 1/2 cups of chicken broth 5 tablespoons of blanched almonds 1/2 cup of seedless golden raisins 3 to 4 cups of cooked rice
Preheat oven to 375ºF. Heat oil and butter in frying pan. Add chicken pieces and brown on all sides. Add onions, tomatoes, cinnamon, salt, and pepper. Cook over low heat for 3 or 4 minutes, then transfer to an ovenproof casserole dish. Add chicken broth, cover and cook for 30 minutes. Add almonds and raisins and cook for 30 minutes more. Line a large oval platter with hot cooked rice. Pile chicken pieces in center of platter. To serve, season sauce to taste and pour over chicken. Serves 4
