| Chicken & Biscuits
Filling:
2 tablespoons of vegetable oil 1 small onion, peeled and chopped 1/2 green pepper, finely chopped 2/3 cup of sliced mushrooms 2 tablespoons of cornstarch 1 1/2 cups of milk 2 cups of cooked chicken, cubed salt and pepper |

Biscuits 2 cups of flour 2 1/2 teaspoons of baking powder 1/3 cup of margarine 2/3 cup of milkHeat oil in skillet. Add onion, green pepper and mushrooms. Sauté for a few minutes. Add cornstarch; cook for 1 minute, stirring constantly. Add milk gradually, stir until boiling. Add the chicken and seasoning. Turn into deep 9 inch pie plate. In a bowl, sift flour and baking powder. Cut in margarine with pastry blender. Stir in milk with fork to make soft dough. Knead lightly on floured board, roll to about 1/2 inch thickness. with cookie cutter, cut into 1 1/2 inch rounds. Place rounds on top of chicken, brush with milk. Bake at 425ºF. for 10 - 15 minutes or until the biscuits are done. Serves 4 |
