| Chicken Breasts En Casserole
12 chicken breasts 3/4 cup of olive oil 1 stick of butter 4 tablespoons of flour 1/4 bunch of parsley, chopped 1 medium onion, chopped 2 cans of beef consommé 1/4 cup of tomato juice 1/2 cup of dry Sherry wine | |
Skin breasts; brown in olive oil and butter. Transfer to casserole, or pan. Add flour to butter/olive oil mixture; then add parsley and onion. Add consommé, tomato juice and Sherry. Cook 10-15 minutes and pour over chicken. Cover and cook at 275ºF. for 3 hours. Serves 12. |
