Chicken Breasts in Sherry

6 chicken breasts
salt and pepper to taste
flour
1/4 cup of salad oil
1 cup of diced celery
2 tablespoons of minced onion
1/4 cup of Sherry
3/4 cup cream
1 teaspoon of salt
1/4 teaspoon of pepper

Sprinkle chicken breasts lightly with salt, pepper, and flour. Fry chicken in oil in skillet until light brown. Transfer to casserole. Add celery, onion, and 1 tablespoon of flour to oil in skillet; cook over low heat 2 minutes, stirring constantly. Season lightly if necessary, and add to chicken. Add wine and cream; cover and bake at 350ºF. for 30-45 minutes, or until tender. Serves 6.
