Chicken Breasts with Lime Juice

2 whole boned and skinned chicken breasts halved
1/2 to 1 teaspoon of Cajun seasonings
1/2 teaspoon of garlic powder
1/4 teaspoon of  black pepper
juice from 1 lime
1 1/2 teaspoons of butter
1 tablespoon of olive oil
1/2 cup of white wine
1 large tomato, skinned, seeded, and chopped
lime slices

Wash and pat dry the chicken breasts. Rub with Cajun seasoning, garlic powder, and pepper. Dip in juice of 1/2 lime. Melt the butter and oil and sauté chicken pieces basting with any leftover juice as it is cooking. Add wine and tomato and simmer until chicken is done. Before serving, pour over the juice from the other half of the lime and garnish with lime juices. Serves 4
