Chicken Cacciatore

3 pounds of whole chicken
1/4 cup of olive oil
1/2 medium onion, sliced thinly
1 clove of garlic, minced
1/2 large bell pepper, sliced thinly
2 Italian plum tomatoes, coarsely chopped
1/4 teaspoon of dried basil
1/4 teaspoon of oregano
1/4 teaspoon of rosemary
4 ounces mushrooms, sliced
salt, black pepper, and cayenne pepper, to taste

Cut chicken into serving size pieces; season with salt, pepper, and cayenne. In a Dutch oven, sauté onions, garlic, and bell pepper in olive oil until limp. Remove from pan. Brown chicken in same olive oil. Add cooked onion mixture and remaining ingredients to kettle. Simmer over medium low heat until chicken is cooked through (about 30 minutes). Serves 3.
