Chicken w/ Caper Sauce
Pollo farcito lessato con salsa di capperi

3/4 cup of margarine or butter
1/4 pound of chicken livers, chopped
one 4 ounce can of sliced mushrooms
2 1/2 cups of bread crumbs
1/2 cup of milk
1 tablespoon of parsley
1/4 teaspoon of dried oregano
1/4 teaspoon of nutmeg
one 4 - 5 pound roasting chicken
2 cups of water
1 medium onion, sliced
1 stalk celery, chopped
1 carrot, chopped
1/4 teaspoon of dried thyme
1 bay leaf
2 tablespoons of capers
4 anchovy fillets

Melt 4 tablespoons of margarine in a large skillet. Brown chicken livers in margarine, cook 1 minute. Soak bread crumbs in milk, drain. Add bread crumbs, parsley, oregano, and nutmeg,, mix lightly. Stuff body and neck cavities of chicken lightly, truss. Place chicken in Dutch oven, add water, onion, celery, carrot, thyme and bay leaf. Cover. Cook over low heat until chicken is tender, about 1 1/2 hours. Chop capers and anchovies together. Melt remaining margarine in small saucepan, add capers and anchovies. Serve over chicken. 4 servings.
