| Chicken Croquettes
1/4 cup of vegetable shortening 1/2 cup of flour 1/2 teaspoon of salt 1/3 teaspoon of black pepper 1 cup of chicken broth 1/3 cup of cream 2 eggs 1 1/2 cups of cooked chicken, cubed soft bread crumbs 1/4 cup of milk | |
Melt shortening; add flour, salt, and pepper and stir until bubbly. Add broth and cream; stir until mixture boils. Add 1 slightly beaten egg and continue to cook without boiling until the mixture separates slightly from the pan. Add chicken; mix and turn into a plate. When cold, shape in oblong cakes. Roll in the crumbs; cover with beaten egg mixed with milk and again roll in crumbs. Fry in additional vegetable shortening heated to 375ºF. until golden brown. Drain on paper towels. Serves 6. |
