| Chicken Fajitas Amarillo
Juice of 4 to 5 limes 2 to 4 garlic cloves, pressed 2 jalapeno peppers, seeded and chopped (remember to use gloves) A handful of fresh cilantro, chopped one 12 ounce bottle of Mexican beer 2 pounds of boneless chicken Freshly ground lemon pepper
Mix the lime juice, garlic, peppers, cilantro, and beer. Pour over chicken. Marinate for 6 to 8 hours. Sprinkle chicken with lemon pepper, then grill or broil, basting with marinade, until done. Slice and serve with heated flour tortillas.
Garnishes: Salsa Plain yogurt or sour cream Chopped onion Chopped tomatoes Green, red, and yellow peppers sautéed in 1 tablespoon of canola oil
Hot Sauce: Chop 1 onion, 1 jalapeno pepper, seeded, and 1/2 tomato in blender or food processor. Serves 6 to 8
Amarillo is the 15th-largest city in the U.S. State of Texas, the largest in the Texas Panhandle, and the seat of Potter County.[3] A portion of the city extends into Randall County. Amarillo, originally named Oneida, is situated in the Llano Estacado region.[5] The availability of the railroad and freight service provided by the Fort Worth and Denver City Railroad contributed to the city's growth as a cattle marketing center in the late 19th century.[6] Amarillo is the regional economic center for the Texas Panhandle,[7] and is economically important to Eastern New Mexico and the Oklahoma Panhandle.
