Chicken Florentine 2
3 pounds of chicken pieces 2 to 3 tablespoons of flour, seasoned with salt and pepper 6 tablespoons of butter 1 pound of frozen spinach 1 tablespoon of flour 3 to 4 tablespoons of light cream 1/4 teaspoon of paprika 4 to 5 tablespoons of grated Parmesan cheese 3 tablespoons of cornflake or bread crumbs
Roll chicken pieces in seasoned flour. Melt 3 tablespoons of butter in frying pan. Add chicken pieces and cook until browned, about 10minutes. Preheat oven to 400ºF. Cook frozen spinach following directions on package. Add 2 tablespoons of butter and toss until melted. Sprinkle in flour. Bring spinach to a boil, then add cream and paprika. Spoon spinach mixture into buttered, ovenproof dish. Arrange chicken piece son top. Mix cheese and cornflake or bread crumbs together. Melt remaining butter and dribble on top. Bake for 25 to 30 minutes or until topping is crisp and brown. Serves 4
