2 1/2 pounds of chicken, cooked 1/2 cup of cold butter or margarine 2 tablespoons of flour 2 eggs 2 teaspoons of salt a heavy dash of ground pepper 2 cups of cream |

Remove the chicken meat from the bones and grind it well with the cold butter 3 times. Add the other ingredients, mixing well after each addition. Add the cream last, gradually, being sure it is absorbed after each addition. Makes 6 servings. This can be used as dumplings in soup or as croquettes. |
