Chicken w/Lemon Sauce
1/2 cup of butter or margarine 2 broiler chickens, halved 1 clove garlic, peeled and crushed 1 1/2 teaspoons of salt 1/4 cup of salad oil 1/2 cup of lemon juice 2 tablespoons of minced onion 1/2 teaspoon of freshly ground black pepper 1/2 teaspoon of thyme
Melt butter in heavy frying pan with lid. Add chicken and brown well on both sides. Combine the remaining ingredients and pour over chicken. Cover tightly. Cook over low heat about 40 minutes or until chicken is tender. Transfer to serving dish and serve. Serves 6 to 8
