Chicken in Peanut Sauce

3 pound fryer
salt to taste
1/2 teaspoon of garlic powder
2 tablespoons of butter
16 ounce jar of peanut butter
2 cups of water
1 hot green pepper, diced

Cut the chicken into serving pieces and season with salt and garlic powder. Brown the chicken in the butter in a frying pan. Empty the peanut butter into a heavy skillet or Dutch oven. Add the water a little at a time, stirring constantly until a thin sauce results. Add the chicken and the juices from the frying pan. Cover, and simmer for 1 hour, stirring occasionally with a wooden spoon. Shortly before serving pour off 1 cup of the peanut sauce and mix it with the diced hot green pepper. Thin it with water and boil it for a few minutes. Serve this mixture as a gravy over Fluffy rice. Serves 4
