Chicken, Pear & Blue Cheese Salad
6 cups of torn mixed greens or mesclun, about 8 ounces 10 to 12 ounces of roasted or grilled chicken breast, sliced 3/4 cup of bottled reduced calorie or regular blue cheese salad dressing 2 ripe pears, cored and sliced Freshly ground pepper, optional
In a large mixing bowl combine the mixed greens, chicken and salad dressing, toss gently to coat. Arrange greens mixture in individual salad bowls or on dinner plates. Top with pear slices. If desired, sprinkle with pepper. Makes 4 servings |
